MORROCAN SALAD WITH AUSTRALIAN FLAVOURS

INGREDIENTS

2 cups of Quinoa

Boiling water to cook the quinoa

1/4 cup of Chopped celery 

1/4 cup of chopped cucumber

1/4 cup of chopped red onion

1/4 cup of chopped yellow and red capsicum

2 teaspoons of Moroccan spice mix

Olive oil

1-2 pinches of Australian salt

1/4 cup of Australian Sultanas

NATIF Sea Parsley

NATIF freeze dried Riberries

NATIF freeze dried Muntries

 

METHOD

Cook Quinoa in boiling water for 20 minutes or until cooked.

Drain.

Fry the Moroccan spice mix for 1 minute with some olive oil and salt in a fry pan and add the quinoa to pick up the flavours.

Set aside to cool.

In a large salad bowl add the quinoa, all the chopped ingredients, sultanas and half of the NATIF fruits.

Mix well with some extra olive oil if needed till all is combined.

Sprinkle the rest of the NATIF fruits on top for colour.

Serve to family and friends and keep some for lunch the next day.
