Rainforest Cherry Whole Fruit

(Syzygium aqueum) From the Lilly Pilly family.

This amazing beautiful looking Native Fruit with its bell shape and bright red colour grows in the Northern parts of NSW.  Also known as Bell Fruit and Water Apple.

This tree was Traditionally used by Aboriginal people for food and medicine.

Fresh, they are crisp, watery, tart and tangy.  When added to liquid will tint it pink-red.

NATIF Freeze dried whole Rainforest Cherries are impressive when added to desserts or beverages.

Use the Rainforest Cherries in fruit salads, sliced on top of pavlova and tarts, use to make jams, chutneys, fruit pies, puddings, add to baking and use to garnish food and beverages.

Riberry Fruit 

(Syzygium luehmannii)

Also known as Clove Lilli Pilly, Cherry Satinash

Riberries are a sub-tropical rainforest tree from the east coast of NSW and southern Queensland, although plantations are found in Victoria and South Australia.  The fruit is harvested December through to January.

The colour and flavours are intense with added health benefits.  Use them across sweet and savoury applications.

• The fruit has a crisp, fresh berry tart and spicy flavour similar to cloves and cinnamon.
• They leave a refreshing, perfumed, cleansing sensation on the pallet when eaten.
• Rehydrate in water or juice, make lillipilli jam and fruit pastes for cheese platters, add to stewed fruits, or soak and add them to fruit and savoury salads, gelato, cordials, cocktails, healthy desserts, berry pies and baking.  Use them in glazes for meat dishes.

Health Benefits

Riberries contain anthocyanins, antioxidants which give the fruit its ruby pigment. Antioxidants are known to potentially prevent or delay common known diseases like Alzeihmer's, cardiovascular and autoimmune diseases, cancer and diabetes. Riberries are also a good source of calcium, magnesium and contain high levels of folate.

Rivermint 

(Mentha australis)

River Mint (or Native Mint) grows in all states of Australia except Western Australia, naturally close to rivers and water. Smells like Spearmint and was also used by Indigenous Australians for medicinal purposes.

Wattleseed (Acacia victoriae)

A new naturalised Australian wild plant has been here for around a thousand years and thought to have been bought over from Indonesia.

The whole plant is edible and the young leaves are great in salads.

The calyx is the hero part of the plant after flowering.  It grows into a fruit like calyx which has a Tart, raspberry flavour which can be used in sweet and savoury dishes as well as in beverages. 

Tastes similar to Rhubarb and Raspberry.  Makes an amazing Tea and colours the water red with its pigments.

Use the dried Fruit or Powder to make cordials, jellies, sauces, sorbets, syrups, tea, jams, chutneys, fruit salads and compotes, deserts, cold beverages or use as a food garnish.

Rosella calyx fruit are a good source of vitamin C and antioxidants.

Saltbush

(Atriplex nummularia)

Saltbush is found in large areas of dry inland Australia, coastal and arid areas all around Australia. Contains mineral salts in the leaves and can be added to foods instead of using normal salt.

• Add ground saltbush onto any foods at the last minute for a natural salty flavour with added minerals.
• Add to dukkas, marinades, sauces, salads, breads, pasta, BBQS and roasted vegetables.
• Try shallow frying the fresh leaves (like sage leaves) and add as a garnish to savoury dishes.

Strawberry Gum 

(Eucalyptus olida) 

The Strawberry Gum (also known as Forestberry)is a Eucalyptus tree growing in the Northern Tablelands of NSW in Eastern Australia. The essential oils in the leaves give it the strawberry lolly aroma.

• Smells of strawberry and eucalyptus.
• Use to flavour deserts, fruit dishes and tarts, add to whipped creams, raw deserts, ice-cream, baking, sauces, jams, pavlova, creamy desserts, parfaits, sauces, tea and other drinks like juices and smoothies.

Kunzea Whole Leaf

(Kunzea ambigua).  Also known as Poverty or Tick Bush.

This Australian native shrub with a lovely white floral and tiny leaves which are harvested in Tasmania.  Part of the Myrtle family of plants.

The flavour of the leaf resembles, eucalyptus, citrus and menthol, with a strong peppery finish that lasts!  The flower may also be used as a garnish and has a honey note.

The leaf can be brewed as a tea or added to sauces, syrups, jelly, seasoning mixes, salad dressings, one pot roasts, baking and breads, dips, marinades, home made cordials and other beverages, seafood dishes, roast veggie and rice garnish.

Use it as you would like Lemon Myrtle.  You only need a small pinch to flavour food. You can also mill the leaf to powder.  Cooking can bring out the flavour even more.

Wild Rosella Seeds

(Hibiscus sabdariffa) - Cocktail Red.

Wildly naturalised in Australia over a few thousand years and used Traditionally.

Pick the rich red calyx off the stem. Use the red calyx whole and fresh or alternatively dry the calyx for later use in teas, sauces, jams and jellies. The petals of the dried calyx can be used to garnish and flavour food and beverages and add a rich red colour.

• Prefers a well-drained moist soil in a protected sunny position. drought and frost tender.
• SOAK seeds overnight in warm water.
• Sow seed on a porous seed raising mix and cover to the depth of the seed width.
• Place in a warm shaded or semi shaded position to avoid dying out.
• The growing medium should be well draining but should remain damp between watering.
• Keep moist but not too wet as the seed may rot. Do not let the growing mix completely dry out.
• Germination should occur in 10-28 days depending on the temperature and conditions.
